Offering GLUTEN FREE and VEGAN treats! Established in May of 2019, Gail’s Garden & Bakery was founded on the principle that anyone eating healthy to improve their lifestyle (that would be us!) or a medical necessity existed that prevented a person have certain foods, did not mean giving up foods that have been a part of everyday life.

Taking the time to have conversations with persons who prefer a vegan lifestyle, those that have autoimmune ailments and with our own preferences, the owners (Gail and Bob Arias) committed to providing delicious foods. We agreed on the following practices to get us started:

  1. Local ingredients when possible ( I don’t know anyone growing lemons in NC - if you do please let me know :)). This means seasonal menus - if we can freeze or can fruits to utilize off season, it might mean someone having a warm blueberry muffin in January - oh boy!

  2. Work with farmers who employ organic practices, inclusive of our garden. Use as many heirloom varieties as possible for best flavor.

  3. Avoid anything GMO

  4. Sweeteners - no refined sugars! Maple Syrup, Honey, Agave, Raw Cane Sugar, Black Strap Molasses.

  5. Non-Dairy items to include making our own nut (hazelnut mostly) milk, or if preferred milk that is local will be used.

  6. No Artificial Preservatives. Food was meant to be delicious and enjoyed - not to be placed on a pedestal for viewing - although it can be beautiful artisan work! Natural preservatives - Pink Himalayan Salt, Sugar.

  7. Understanding with autoimmune disorders, many allergies exist - always make the time to do a custom order to make someone smile.
